  • 1 large egg lightly beaten
  • 2 cloves garlic minced
  • 2 teaspoons paprika optional, for flavor and color

  • 8 slices prosciutto thinly sliced
  • 2 cups water or chicken broth for baking

Method
 

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, lightly beaten egg, minced garlic, paprika, salt, and pepper. Mix everything together with clean hands until evenly blended—this creates a flavorful base for your meatballs.
  3. Divide the mixture and gently shape it into small, evenly-sized meatballs, about 1 to 1.5 inches in diameter. Place each ball on the prepared baking sheet, spacing them apart to allow even baking.
  4. Wrap each meatball with a strip of prosciutto, starting at the top and overlapping slightly to resemble bandages of a mummy. Tuck the ends underneath to secure the wrap and create a spooky, wrapped look.
  5. Pour water or chicken broth into the baking sheet to create steam and keep the meatballs moist as they bake, then place the tray in the oven.
  6. Bake for about 20-25 minutes, or until the prosciutto is crispy and the meatballs are cooked through, with an internal temperature of 160°F (71°C). Keep an eye on them as they bake to prevent over-browning.
  7. Remove the baking sheet from the oven and allow the meatballs to cool slightly. Use tongs to transfer them to a serving platter.
  8. Use small dots of mustard or slices of black olive to add eyes on each mummy meatball, giving them a fun, spooky facial expression.
