Ingredients

  • 2 pounds ripe tomatoes halved
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 pinch crushed red pepper flakes optional

Equipment

  • Baking sheet
  • Blender or immersion blender
  • Cooking pot

Method

  1. Preheat your oven to 425°F (220°C). Spread the halved tomatoes on a baking sheet, cut side up, and brush them lightly with olive oil. Roast for about 35-40 minutes until they are blistered and slightly charred around the edges.
  2. Remove the tomatoes from the oven and let them cool just enough to handle. The skins should be blistered and slightly blackened, filling your kitchen with a smoky aroma.
  3. Transfer the roasted tomatoes, along with any juices in the pan, into a blender or use an immersion blender directly in the baking sheet to blend until smooth or slightly chunky, depending on your preference.
  4. Pour the blended tomato mixture into a cooking pot and bring it to a gentle simmer over medium heat. Add the minced garlic, salt, black pepper, and red pepper flakes, stirring to combine.
  5. Simmer the sauce uncovered for 15-20 minutes, stirring occasionally, until it thickens slightly and the flavors meld. You should notice a richer color and a fragrant aroma emerging.
  6. Taste the sauce and adjust seasoning if necessary, adding more salt or pepper as desired. For a smoother consistency, blend again with an immersion blender if preferred.

Notes

This roasted tomato sauce pairs beautifully with pasta, grilled vegetables, or as a base for other dishes.
